Banana Bread Hotcakes from Tavola Restaurant

Courtesy of our team at Plantation Island Resort, you could make our favourite cocktail and hotcakes at home, perhaps not at the same time.

Ingredients:

  • 50g Walnut pieces
  • 300g Flour plain white
  • 1/2 tsp Ground cinnamon
  • 2 tsp Baking powder
  • 300ml Almond milk
  • 100g Light brown sugar
  • 1 tsp Vanilla extract
  • 3 tbsp Vegetable oil
  • 3 Bananas very ripe
  • 2 tbsp Butter oil for frying
  • 75ml Maple syrup for topping

Prep Method:

  1. Place a medium frying pan over low heat and add the walnuts. Toast gently for around 5 minutes, tossing regularly to make sure they don’t burn. Remove from the pan and allow to cool fully before finely chopping. Alternatively add to a blender and grind until you have a very rough textured walnut flour.
  2. Place the toasted walnuts, plain white flour, ground cinnamon and baking powder in a medium bowl and whisk together. Add the remaining pancake ingredients and whisk together. Cover the bowl and leave to rest for 5 minutes.
  3. On a medium heat flat grill, add around a quarter of a cup of the batter to the pan. Allow to cook until the top of the pancake is almost entirely cooked, around 2 mins.
  4. Flip the pancake and fry for another 20-30 seconds on the other side, or just until lightly browned. Remove the pancake from the pan and keep warm in the oven or on a warm plate. Repeat with the remaining batter.
  5. Garnish with Maple Syrup and slices of banana

Ingredients:

  • 30ml Czarina Vodka
  • 20ml Strawberry Liquor
  • 10ml Lemon Squash
  • 90ml Pineapple Juice
  • 20ml Midori

Prep Method:

  1. To create this beautiful cocktail, start by filling a tall glass with ice.
  2. Next, pour in a layer of Strawberry Liquor.
  3. Followed by a layer of Czarina Vodka (or you can substitute with a white rum like Malibu).
  4. Then a layer of Pineapple Juice.
  5. Then, slowly pour in a layer of Lemon Squash
  6. Followed by a final layer of Midori.
  7. Add a straw and garnishes.
  8. As you pour each layer, you will see the colors slowly blend together, creating a beautiful gradient effect in the glass. The result is a visually stunning cocktail that is just as delicious as it is beautiful.

Guestology Graduation At Fiji Gateway Hotel

This graduation ceremony proudly marks the successful completion of its In-house developed Guest Experience Learning Curriculum called Guestology. Plantation Island Resort Celebrates World Mangrove Day: Embracing Nature’s Guardians

Plantation Island Resort is joining the global celebration of World Mangrove Day on July 26th as their continued commitment to enhancing the natural environment and sustainable tourism practices. As an island destination, the resort recognizes the crucial role mangrove ecosystems play in protecting coastlines, supporting marine life, and mitigating climate change. To date, Plantation Island Resort has planted over 1,000 seedlings by engaging visiting international children and local community students in our regular environmental and conservation activities.

Mangroves, nature’s coastal guardians, play a vital role in protecting Plantation Island Resort and countless other coastal regions worldwide. These resilient ecosystems act as natural barriers, shielding the resort from natural damage, cyclones, waves, flood, erosion, and rising sea levels. They maintain water quality and clarity, filtering all pollutants and trapping sediments. Mangroves rich biodiversity also offers a haven for marine life, enriching snorkelling and diving experiences for guests.

Emergency measures to save coral reefs from impending extinction

International Training Courses – Corals for Conservation, a Fiji-registered non-profit, has partnered with Plantation Island Resort to create a training and demonstration program for ecologically-based Coral Gardening for Climate Change Adaptation.

The goal of our program is to offer affordable on-site training to build skills and a deeper understanding among coral reef professionals in coral reef restoration ecology and diverse restoration methods. Which will in turn enable them to more effectively restore bleaching resistant corals to coral reefs in their areas of operation.
