The pop-up restaurant, located within the resort’s Black Marlin Bar, will redefine Indian cuisine, offering guests an extraordinary journey through the flavors of India. Mirch Restaurant will bring India’s rich cultural heritage to life under the exceptional culinary direction of Chef Ramesh Bundi.
With 16 years of experience, Chef Bundi’s passion for cooking has taken him from Bangalore, India, to Michelin-starred restaurants across the globe and renowned establishments in England, France, Switzerland, Dubai, and Mauritius.
“We’re the first resort on the Coral Coast to establish an authentic Indian restaurant, and I’m excited for our guests to enjoy a culinary journey that offers a contemporary twist on classics,” said General Manager Francis Lee, Shangri-La Yanuca Island, Fiji.
The Mirch menu will celebrate the diverse landscapes of India, from the coastal spices of the south to the hearty flavors of Kashmir and the vibrant street food culture of Mumbai. Guests will enjoy an inventive menu where every dish is a star turn, from Tandoori home-smoked salmon and Kashmiri lamb rogan josh to prawn masala dosa, along with desserts such as chocomosa and shrikhand rasmalai.
To further enhance the experience, Mirch offers a curated selection of wine pairings, allowing guests to enjoy thoughtfully matched wines and beverages that highlight the unique flavors of each dish. Mirch Indian Restaurant is nestled within Black Marlin Bar at Shangri-La Yanuca Island, Fiji. The pop-up restaurant is open three times per week on alternate days from 6 p.m. to 9 p.m.
